Vegetarian Times Complete Cookbook, published in 1995. Almost 500 pages of over 600 meatless recipes from the editors of Vegetarian Times. In addition to the numerous recipes, there are tips on going vegetarian, menu planning and ideas for shopping. There is a very small section on mail order sources (book was published pre-internet) .
Rachel Ray: 365 No Repeats, published in 2005. All meals are 30 minutes to prepare/cook - a Rachel Ray "trademark". A lot of the recipes swap out the one type of meat for another and with a few other ingredients becomes a brand new meal! This book will definitely be useful when I am stumped on what to make for dinner and am tired from a day at the office.
